Harriet's Macadamia & Orange Cake
Ingredients
- 6 eggs
- 250 g macadamia nut meal
- 250 g sugar
- 2 oranges or 3 small ones
- 1 tsp baking powder (not heaped)
Method
Put whole (cleaned) oranges in pot – fill with water till just covered. Cover and boil for 1.5 – 2 hours
(if oranges small 1-1.5 hours is ok)
Preheat oven 190 degrees C.
Chop oranges roughly ( incl skin ) – remove pips and cool. Place eggs and oranges in food processor. Blend till smooth.
In separate bowl mix macadamia nut meal, baking powder and sugar.
Mix wet mixture into dry Fold in till combined. Pour into lined 25cm cake tin (spring form best) until no thicker than 6cm high tin to make ‘fingers’of cake.
Bake for about 40mins until springy to touch in middle – if starts to brown too much on top place a piece of tin foil on top.
Make a syrup to go with it by simmering about ½ cup of caster sugar with about ¾ cup water and thinly sliced (lengthwise) orange rind strips for about 5-10 mins until it thickens a bit and serve with greek yoghurt (and mint is good with it too)
