Macadamia oil Avocado and tomato salsa

Ingredients

  • ½ Red onion, minced
  • 1 tablespoon red wine vinegar
  • 1 avocado, peeled and diced
  • 1 ripe tomato, diced
  • 1 tablespoon macadamia oil
  • Handful or rocket leaves
  • Salt
  • Freshly ground black pepper
  • Juice of ½ a lime (optional)

Method

Put onion and vinegar into a small bowl and let stand for 1 hr to reduce the sharpness of the onion.
Drain well and discard vinegar. Combine onion, avocado, tomato, macadamia oil and rocket leaves
in a salad bowl and turn gently to mix well. Adjust seasoning and add a few drops of lime juice, if
desired.
