Macadamia Dukkah Fish
Ingredients
- Monkfish fillets x 4
- Macadamia Dukkah 50g
- Coconut Milk or Cream
- Lemon
- Organic Brown Rice
- Green Side Salad
Method
1. Heat an oven or BBQ to 220c.
2. Place 1 medium fillet of fish eg Monkfish, on a piece of baking paper large enough to form a parcel.
3. Lightly sprinkle 1 tablespoon of Cathedral Cove Macadamia Dukkah over the fish. Place some onion & 2 slices of lemon on top.
4. Spoon over 3-5 tablespoons of coconut milk & fold the paper into a parcel. Place on cooking foil & wrap the parcel so no liquid escapes.
5. Make 1 parcel per person & place in oven on a tray or on the BBQ (turning the parcel if not using a lid) for 25 minutes.
6. Remove & cool for 5 min, serve with organic brown rice & a side of fresh garden salad.
