Macadamia Kumara Fritters

Ingredients

• 1 large kumara peeled & grated
• 1 large cup of Cathedral Cove Macadamia Flour Mix – Gluten Free (approx 100g)
• 1 teaspoon of baking powder
• 4 teaspoons Cathedral Cove Macadamia Dukkah
• 3/4 of cup of coconut cream
• 1/2 cup of freshly chopped mint or coriander
• 1 lemon zested finely chopped & juiced
• Salt & Pepper
• Macadamia Oil (for cooking)

Method

In a bowl combine the kumara, Macadamia Dukkah, Cathedral Cove Macadamia G/F Flour & Macadamia mix, baking powder, lemon zest, mint, salt & pepper and coconut cream. Mix should be quite thick.

Place a large pan on a medium heat, add enough oil to just cover base of pan.

Using a wet soup spoon, spoon into pan, cook golden on both sides, drain on paper towel.

Serve with a nice carrot & mint salad.

Dukkah can used for dipping with Macadamia Oil, but it is also great sprinkled over any dish like fish, chicken, lamb & vegetables, salads or pasta. Just be creative!!!
