Seasonal Macadamia & Apple Crumble

Ingredients

• 10 Feijoas & 2 Apples (use any tree ripened fruit in season)
• ¼ cup Brown Sugar
• 1 tsp Ground Ginger
• ¼ tsp Crushed Cardamom Seeds (freshly ground from green pods)
• 1 cup Cathedral Cove Macadamia Organic Muesli
• 30ml Cathedral Cove Macadamia Oil

Method

Remove feijoa’s from their skin with a teaspoon (& thinly slice apples if using them), place evenly in a
ceramic dish to cover the base (add more feijoa’s if required).
Thoroughly mix the sugar, ginger, cardamom & muesli in a mixing bowl (add some rice flour to achieve a dry
crumble if you like). Slowly mix in the macadamia oil to coat all the ingredients.
Evenly spread the crumble over the fruit & bake on 150 degrees for 20-25 minutes (watching for browning
on the top after 10min & cover with foil if necessary).
Remove from oven & serve with your favourite Greek style Yoghurt or Vanilla Ice Cream.
