Cut 1 Size 14 Corn fed free range chicken in half & place on a large roasting dish with a few lemon wedges.
Pour ¼ cup of white wine over the chicken & sprinkle Cathedral Cove Macadamia Dukkah over both halves. Bake on 180° c for 20 minutes, baste chicken by spooning over wine from the base of the dish.
Place some chopped onion & garlic in roasting dish before cooking for another 20 minutes, baste chicken again & cook for further 20 minutes before removing from oven.
Serve with your favourite seasonal organic vegetables.
