Macadamia Crumbed Fish & Chips

Ingredients

Method

The Fish

1. Dry 4 pieces of fresh fish ie Snapper or Tarakihi.
2. Lightly sprinkle each fillet with Cathedral Cove Macadamia Lemon or Chilli Kelp
Sprinkle.
3. In a pan or on the BBQ heat a thin layer of Macadamia Oil to medium heat.
4. Place each fillet in the oil and sear for a few minutes until cooked most of the
way through, then turn to brown the other side.
5. Remove fillets and place on a serving plate or dish on top of your chips.
6. Garnish with a side of green salad. Serve immediately

Homemade Chips

1. In a pot boil 3-4 large potato’s until they’re just cooked.
2. Allow to cool before slicing each into thick pieces, cutting across the short side
to form ‘chips’. Dry slightly on a paper towel. You can prepare these & keep
them in the fridge.
3. In a pan or on the BBQ heat a thin layer of Macadamia Oil to medium heat.
4. Place chips in the oil & sprinkle with sea salt to taste.
5. Cook for a few minutes on either side until nicely browned.
