White Chocolate and Macadamia Brownie

Ingredients

  • 2 cups castor sugar
  • ½ cup cocoa, sifted
  • 250g butter, melted
  • 4 eggs, lightly beaten
  • 2 tablespoons vanilla essence
  • 100g flour, sifted
  • 250g white chocolate bits, plus extra for decorating
  • 210g Natural macadamia nuts, roughly chopped

Method

Preheat oven to 170 c.

Whisk together sugar, coca, butter, eggs and vanilla until combined.

Fold in the flour, add the chocolate and nuts, fold through the mixture evenly.

Spoon into a 24cm square cake tin lined with baking powder and bake for 35-45 minutes.

The mixture should still cling slightly to a skewer when tested. Cool brownie in the tin. Cut into squares.
Decorate with drizzles of melted white chocolate.

Makes about 16 pieces.
