Macadamia & Fish Roll-Up's, Thai Style

Ingredients

  • 4 snapper or teraki fillets (cut down the centre, lengthwise)
  • 3 Tbsp Macadamia oil
  • 3 Tbsp Macadamia Dukkah (From a packet of Cathedral Cove Macadamia Dukkah)

Method

Mix the oil and dukkah together.

Using a knife, coat one side of the fish, and roll up and secure with a tooth pick. You will have 4 large and 4 small rolls.

Place in a pyrex or earthenware dish, that has been lightly sprayed with oil.

Pour a 270 ml can of Ayams light coconut cream over the top of the fish.

Bake at 200 degrees for 10 min.

Remove from oven & baste the fish with the coconut cream.

Lower the heat to 150 degrees and cook for 15- 20 min till nicely browned.

Serve fish on a bed of cooked wild rice. Spoon sauce over fish.

Sprinkle with chopped coriander or spring onions to garnish
