Orange Macadamia Muffins

Ingredients

  • 1 orange - cut into ¼’s
  • 1 c sugar
  • 1 egg
  • ½ c orange juice
  • 100g butter melted
  • 1c sour cream
  • 2 c standard flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ c chopped macadamia natural nuts
Topping : 2 Tbsp butter, 4 Tbsp raw sugar, ½ c chopped natural macadamias.

Method

Melt butter and sugar in a saucepan on the stove. Cook gently, stirring with a wooden spoon. Add macadamias.

Put chopped orange and sugar in food processor.
Process till finely chopped.

Add egg, melted butter, orange juice and sour cream. Process until well combined.

Sift dry ingredients into a bowl. Mix in macadamia nuts.

Tip orange mixture into bowl. Fold in carefully. Do not over mix.

Place mixture, in lightly sprayed muffin tins.

Add a teaspoon of the topping on each muffin.

Bake at 200 degrees C for 14 min, until golden brown, and centres spring back.
