Macadamia Pomegranate Pesto

Ingredients

  • 75g chopped Macadamia nuts
  • 75g macadamia meal or finely processed nuts
  • 50g fresh coriander
  • 70g red onion
  • ½ tsp chilli paste or one chopped fresh chilli
  • 80mls macadamia oil
  • Juice of one lime
  • 1 tsp pomegranate molasses ( Sabato )

Method

Place onion,chilli,coriander,lime juice ,pomegranate molasses and macadamia nuts in the food processor.

Slowly add macadamia oil,till just all mixed.

NB : Serve with mussels or seafood,chicken or pasta
